Mango Couscous Salad
1 cup water
3/4 cup couscous
1 Tbsp. tahini
1 Tbsp. orange juice
1 cup Morinaga Silken Tofu – Soft
pinch of ground ginger
1/2 cup any variety of legumes, cooked
1/4 cup raisins
1/4 cup fresh cilantro leaves
1/2 cup assorted diced dried fruits (like pineapple, papaya, or apricot)
Prepare couscous and set aside.
Meanwhile, stir together tahini and orange juice to make a smooth taste.
Place tofu in a large mixing bowl and whisk together until light and smooth. Whisk in tahini and ginger. Stir in the cooked legumes, mango, and raisins.
Fluff couscous with fork to break up any lumps. Stir it into the mango mixture. Add cilantro and dried fruits; stir until blended. Cover and refrigerate until chilled, about 3 hours.
