3 oz Aji Amarillo Paste, depending on the desired heat level
1 oz garlic, chopped
1/2 bunch cilantro leaves, optional
2 tbsp cumin
2 limes, juiced
Salt and pepper to taste
SALAD
Red peppers, grilled
Onion, grilled
Eggplant, grilled
Portobello mushrooms, grilled
Zucchini, grilled
Spinach
INSTRUCTIONS
Put all dressing ingredients into a blender and puree until smooth. Add salt and pepper to taste. Add dressing to serving dish. Place grilled vegetables and spinach on serving plate.
