Caleña Tofu Salad Dressing
YIELD: 2 servings

INGREDIENTS
DRESSING
- 1 package Mori-Nu Silken Tofu Soft
- 1/3 cup ketchup
- 1/4 cup cilantro, chopped (optional)
- 2 tbsp lemon juice
- 1 tbsp maple syrup
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp sea salt, plus a pinch or to taste
- 4 jarred jalapeño slices. chopped (optional)
SALAD
- 1 head romaine lettuce, cut in half, grilled
- 1/2 cup shelled edamame, cooked according to package directions, divided
- 6 mango slices, divided
- 1/2 cup avocado, peeled and diced, divided
- 1/2 cup cucumbers, sliced, divided
- 1/2 cup jicama, peeled and sliced into sticks, divided
INSTRUCTIONS
- In a blender add tofu; blend until smooth. Add remaining dressing ingredients except for the jalapeño; blend until ingredients are well combine which should 30 seconds.to a minute depending your blender. Pour mixture in a bowl, add the jalapeño. On 2 serving plates, add romaine lettuce, edamame. Mango, avocado, cucumbers and jicama. Serve.
