Italian Tofu Meatballs
Vegan tofu meatball recipe that can be served with bread or pasta for a meatless lunch or dinner. Use gluten-free breadcrumbs for a delicious, gluten-free tofu meal!
SERVINGS: 4 (MAKES 12 MEATBALLS)
1 package Mori-Nu Silken Tofu Soft or Organic
1/4 tsp garlic powder
1/2 tsp dried oregano
1 Tbsp fresh parsley, chopped
1 Tbsp black olives, chopped
1/2 – 1 cup breadcrumbs
1/2 tsp salt or to taste
1/2 Tbsp capers, chopped (optional)
1 Tbsp olive oil
1/2 onion, chopped
1 clove garlic, minced
2 cups tomatoes, crushed
Salt & pepper to taste
Drain tofu and cut into large cubes. Press tofu cubes through a ricer into a large bowl.
Add remaining meatball ingredients starting with 1/2 cup of breadcrumbs and only adding the other ½ cup if needed. Mix well, then roll into 12 meatballs and refrigerate while preparing the sauce.
In a large skillet, sauté the chopped onion with the olive oil for about 5 minutes. Add the garlic and tomatoes, then simmer for at least 15 minutes or until desired consistency.
Mix in remaining sauce ingredients, then add tofu meatballs and cook for about 10 minutes, turning them halfway. Serve immediately.
