Tofu Alla Parmigiana

How to cook tofu Italian-style! Perfect with a side of pasta, this breaded, fried tofu recipe includes the traditional flavors of Italian herbs, marinara sauce, and melted cheese but with a vegetarian twist! Make it a vegan tofu dish by using vegan cheeses.

Tofu Alla Parmigiana

INGREDIENTS:

1 package Mori-Nu Silken Tofu Firm, Extra Firm, or Lite Firm
1/2 cup breadcrumbs
1 Tbsp dried oregano
1/4 tsp garlic powder
2 Tbsp fresh basil, chopped
6 Tbsp mozzarella cheese or alternative, shredded
6 Tbsp marinara sauce
2-3 Tbsp olive oil, divided
Sea salt to taste
2 Tbsp Parmesan cheese or alternative (optional)

 

PREPARATION:

Drain tofu and slice into 6 slices (about 2/3” thick).

On a plate, combine the breadcrumbs, oregano, garlic powder, sea salt, and Parmesan. Coat tofu slices with bread crumb mixture, making sure to get all sides.

Heat 1-2 tablespoons of oil in a large skillet and cook the tofu until crispy on all sides.

In a separate pan, add one tablespoon of oil and the crispy tofu. Add one tablespoon of marinara sauce on top of each slice of tofu, then top with shredded mozzarella and chopped fresh basil. Cover the pan and cook over medium heat for about 5-10 minutes, or until the sauce is hot and the cheese is fully melted.

Serve immediately and sprinkle with more basil if desired.
