Atole

YIELD: 5 cups

INGREDIENTS:
 

1 package Mori-Nu Silken Tofu Soft 

4 cups low fat milk 

1/4 cup piloncillo 

1 cinnamon stick 

1/2 cup masa harina 

2 teaspoons vanilla extract 

1 - 1 1/2 cups warm water, if a light consistency is desired

INSTRUCTIONS:

  1. In a medium pot, heat milk with piloncillo, cinnamon, masa harina and vanilla. Cook until piloncillo melts and masa harina has dissolved. 
     
  2. Meanwhile, in a blender, add the tofu with the liquid and blend for a few seconds or until puree. Transfer to the pot with the atole and continue to cook until hot. May add warm water if a lighter consistency is desired. Remove cinnamon stick and serve hot.
