Açaí Tofu Protein Bowl

YIELD: 2 cups

INGREDIENTS

 

SMOOTHIE 

  • 1/2 package Mori-Nu Silken Tofu Lite Firm (refrigerate remaining tofu)
  • 1 packet (100g) frozen açaí puree, unsweetened
  • 1 banana, peeled, sliced, frozen 
  • 1/2 cup strawberries, frozen
  • 1/2 cup blueberries, frozen

TOPPINGS 

  • 1 small banana, sliced
  • 1-2 strawberries, halved
  • 2 tbsp blueberries
  • 1 tsp granola
  • 1 tsp toasted coconut
  • 1/4 tsp chia seeds
     

INSTRUCTIONS

  1. In a high-powered blender, add all smoothie ingredients then blend until smooth, scraping down sides as needed. 
  2. Pour smoothie into a bowl and add toppings.
