Tofu Pinchos (Puerto Rican Skewers)

Yield: 6 skewers
Tofu Pinchos made with Mori-Nu Silken Tofu - Edamame & Yuzu

INGREDIENTS 

Approximately 1/2 package Mori-Nu Edamame Flavored Silken Tofu, Firm (refrigerate remaining tofu) 
Salt and pepper to taste 
Olive oil to taste 

WITH BASIL 
6 basil leaves 
3 cherry tomatoes, halved 
6 mozzarella cheese cubes, 1/2 inch each 

WITH LEMON 
6 mini lemon wedges (into 8 bite-sized pieces) 
6 half-slices of smoked salmon or vegan fish 
6 mozzarella cheese cubes 

WITH PASTRAMI OR VEGAN ALTERNATIVE (i.e., vegan bacon, prosciutto, etc.) 
6 slices pastrami 
6 pitted black olives

INSTRUCTIONS 

  1. Cut tofu into 1⁄2 inch cubes.
     
  2. Skewer each set of ingredients and put tofu cubes on top.
     
  3. Sprinkle salt and pepper and drizzle olive oil.
     

TIP

This recipe works with Mori-Nu Edamame or Yuzu Flavored Silken Tofu.
