Chilled Edamame Soup

YIELD: 4 cups
Chilled Edamame Soup

INGREDIENTS:

1 package Mori-Nu Edamame Flavored Silken Tofu

1 small onion, chopped

1/4 cup packed fresh cilantro leaves

1 tbsp sesame oil

2 cups vegetable stock/broth

Salt & pepper to taste


TOPPINGS (OPTIONAL)

Fresh vegetables of your choice

Lemon wedge and/or zest

Paprika or cracked black pepper

Sesame oil

PREPARATION:

1. In a blender, add tofu, onion, cilantro, and sesame oil, then blend until smooth.

2. Add vegetable stock/broth, salt, and pepper to the blender, then blend until well-mixed.

3. Chill in refrigerator for 3 hours.

4. Serve with toppings of your choice, or enjoy as is!

 

TIPS

If using a high-end blender, you may add all soup ingredients at once.

Fresh parsley can be substituted for fresh cilantro.

Olive oil can be substituted for sesame oil.

Vegetable stock and vegetable broth will both work for this recipe. Use whichever one has the flavors that you like, as the ingredients vary amongst the different brands.

PLANT-BASED: This recipe uses only plant-based ingredients. Check the vegetable stock/broth label to confirm that it doesn't contain meat-based flavorings.
