Matcha Tofu Protein Bowl

Ingredients
SMOOTHIE
- 1/2 package Mori-Nu Plus Fortified Tofu (refrigerate remaining tofu)
- 2 bananas, peeled, sliced, frozen
- 1 cup fresh spinach, packed
- 1/2 cup coconut cream, frozen into ice cubes
- 2 tsp matcha green tea powder
TOPPINGS
- 1/2 pitaya, scooped into balls
- 2 tbsp blueberries
- 1/2 tsp granola
- 1/2 tsp shredded coconut
- 1/2 tsp hemp seeds
- A few mint leaves (optional garnish)
Instructions
- In a high-powered blender, add all smoothie ingredients then blend until smooth, scraping down sides as needed.
- Pour smoothie into a bowl and add toppings.
