Matcha Tofu Protein Bowl

YIELD: 2 cups

INGREDIENTS

 

SMOOTHIE 

  • 1/2 package Mori-Nu Silken Tofu Lite Firm (refrigerate remaining tofu)
  • 2 bananas, peeled, sliced, frozen
  • 1 cup fresh spinach, packed
  • 1/2 cup coconut cream, frozen into ice cubes
  • 2 tsp matcha green tea powder

TOPPINGS 

  • 1/2 pitaya, scooped into balls
  • 2 tbsp blueberries
  • 1/2 tsp granola
  • 1/2 tsp shredded coconut
  • 1/2 tsp hemp seeds
  • A few mint leaves (optional garnish)
     

INSTRUCTIONS

  1. In a high-powered blender, add all smoothie ingredients then blend until smooth, scraping down sides as needed. 
  2. Pour smoothie into a bowl and add toppings.
